Baking Directions for Vanilla Cake

1 Prep: Heat oven to 350 degrees F. Lightly spray or grease pans (or paper liners for cupcakes).

2 Mix: Combine 3 eggs, 1/2 cup oil, and 1 cup water. Add to cake mix and blend.

3 Bake: bake for approx. 18-25 minutes in two 9" round pans; about 28-36 minutes in a 9" x 13" pan; or about 18-23 minutes for approx. 24 cupcakes. Cake is done when toothpick inserted in center comes out clean.

Finishing Touches: Frost or just enjoy with some fresh strawberries or raspberries and a sprinkle of confectioners sugar.

Ingredients: Evaporated cane juice, sweet brown rice flour, tapioca flour, arrowroot flour, rice milk powder, baking soda, cream of tartar, salt, ground vanilla bean, and xanthan gum.
